Apple Spice Loaf {Snack}



Quick Breads are always a hit around here- Apples are in season so we decided to try out an apple version. Here is the recipe for our apple spice loaf (gf version is listed- I can't vouch for the regular flour but I'm sure it'll work great)

Wet
1 cup applesauce
1/4 cup canola/vegetable oil
1 egg

Dry
1 1/4 cup gluten free flour mix + 1 tsp xanthum gum
(or 1 1/4 cups flour)
1/2 brown sugar
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 tsp baking spice (probably labelled pumpkin pie spice)
1 tsp vanilla extract

1 apple, chopped into small pieces. 

Preheat oven to 350. Combine dry ingredients. Mix in wet ingredients. Chop apple and fold into batter. Pour into loaf pan and bake for 55-60 minutes or until baked all the way through. For muffins cut back time to 25-30 minutes.
